Huevos Rancheros

Ingredients:
½ (approx.) block firm or extra firm tofu (drained)

1 Field Roast Sausage - Mexican Chipotle flavor - quartered or halved length-wise then chopped

¼ - ½ cup of chopped yellow onion - depends how much you want. A ¼ - ½ inch round from the middle of a large onion should do the trick.

½ can "no salt added" pinto beans

Cumin to taste

Turmeric to taste

Olive oil

Any "extras" you'd like: whole wheat tortilla, pico de gallo, salsa, tomatoes, guac, Daiya cheese, etc.


To Make:
Drain the tofu while prepping other ingredients. Chop the sausage and cook in a non-stick pan over medium to high heat. You may need a little cooking spray. Cook until they are nice and brown on the outside. Then add the onion to the pan with a little olive oil. Cook for a minute or two then crumble the tofu into the pan. Sprinkle with cumin and turmeric. Stir until well combined. Cook for about 5 minutes stirring occasionally. Heat the pinto beans in some water or vegetable broth in a saucepan (the microwave is fine too). Add the beans to the tofu mixture and stir until combined then serve. Add your favorite extras and enjoy!

This will keep in the fridge for up to 5 days in a sealed container.
